Chicken vegetable soup: Perfect nutritious food for cold winters

During winter it is particularly important to eat nutritious food which is easy to digest and which will give you all essential minerals and vitamins, plus some extra comfort and energy to cope with winter blues.  One such ideal meal is chicken vegetable soup.  It is often prescribed as medicinal food during colds and coughs due to its light easy to digest, yet rich and nutritiously valuable content.  And what’s more, it is one of the easiest soups to make.

Ingredients:

  • chicken meat
  • 4 carrots, halved
  • 4 stalks celery, halved
  • cabbage (chopped)
  • 1 large onion, halved
  • water to cover
  • salt and freshly ground black pepper to taste

Method:

  1. Place the chicken, carrots, celery, cabbage and onion in a large soup pot; cover with cold water. Heat and simmer, uncovered, until the chicken meat falls off of the bones (skim off foam every so often).
  2. Take everything out of the pot; sieve the stock. Pick the meat off of the bones and chop the carrots, celery and onion. Season with salt and pepper to taste. Return the chicken, carrots, celery and onion to the pot, stir together, and serve.
