Barberry Superfood: what to do

Barberry, or Zereshk, is little known in western kitchen, but this beautiful red berry is very rich in vitamin C and is a wonderful flavouring to rice dishes, salads, soups and snacks. In Europe for many centuries the berries were used for culinary purposes in ways comparable to how citrus peel might be used.
